While it can produce seeds, viability is sketchy and shouldn’t be relied on. It’s best grown fresh each year from the branch cuttings. A prefered method is to take 2 branches of about 18″ and to bury them in the ground several inches deep, in an X pattern. Each planting is allowed to grow for one year, and then completely uprooted. Many large individual tubers will be present. With good tuber production as a priority, the stump should be discarded, but it will regrow. For ideal long term preservation, the tubers are dipped in wax (rather unique amongst other root crops). It is possible to get table-grade roots to set roots, but successful conversion of waxed material into a useful plant is not really worth the effort (we’ve had wax-stripped specimens sit with decent looking roots for over 6 months without sprouting foliage). An ideal system would be to use branches to set a new planting every couple weeks, to ensure perpetual harvest.
Cassava is incredibly versatile; it can be boiled, baked, steamed, grilled, fried, mashed or added to stews. Frequently, it is served with meat, sprinkled with salt, pepper and lime juice. Many recipes call for it to be grated. When cooked, it turns yellow, slightly translucent, a little sweet, and chewy. The root can also be made into a ground meal or flour by washing, peeling and grating it, and then pressing out the juice and drying the meal. The meal can be bought already prepared and frozen. On the French influenced islands, cassava meal is known as farine, a shortened form of farine de manioc.
